So I recently found out that I am gluten intolerant! Dang! It kinda sucks, but when i make cinnamon rolls like this it gives me a little more joy in my otherwise restricted diet! I dare say they are Cinnabon quality! I took a few different recipes that I had and adjusted them to be gluten free and tried it out. First try was a huge success! I never get this lucky! :) Enjoy! :)

Gluten Free Cinnamon Rolls
DOUGH:1 c. warm water – 105-115 degrees2 packets active dry yeast- 4 ½ tsp.1 t. granulated sugar1 c. milk, warmed2/3 c. granulated sugar2/3 c. butter, melted2 t. salt2 eggs, slightly beaten
1 c. prepared instant mashed potatoes3 c. of tapioca flour
3 ½ c. of rice flour
6 tsp. Xanthan gum

SPRINKLE:½ c. butter, melted1-1/2 c. granulated sugar3 T. ground cinnamon1-1/2 c. chopped walnuts or pecans – optional

BOTTOM OF PAN:½ c. butter, melted¼ c. granulated sugar• In a small bowl, mix together warm water, yeast, and 1 t. sugar and set aside.• In a large bowl, mix milk, 2/3 c. sugar, 2/3 c. melted butter, salt and eggs; stir well and add to yeast mixture. • Add prepared instant mashed potatoes and both flours and xanthan gum and mix until smooth. It will be softer dough than with wheat flour.• Turn out onto a well-floured board; knead for a few minutes to make smooth (you do not need to knead for a long time like with gluten breads).• Place in well-buttered glass or plastic bowl, cover, and let rise in warm place, free from drafts, until doubled in bulk, about 1-1/2 hours.• When doubled, punch down dough and let rest 5 minutes• Roll out on floured surface into a 15”x20” rectangle.• Spread dough with ½ c. melted butter• Mix together 1-1/2 c. sugar and cinnamon; sprinkle over buttered dough.• Sprinkle with nuts, if desired.• Roll up jellyroll-fashion and pinch edge together to seal.• Cut into 12-15 slices.• Coat bottom of a 13”x9” baking pan and an 8” square pan with ½ c. melted butter, then sprinkle with ¼ c. sugar.
• Place cinnamon roll slices close together in pans.• Let rise in warm place until dough is doubled in bulk, about 45 minutes.• Bake in 350 degree oven for 25-30 minutes, or until rolls are nicely browned.


1 c. butter
½ lb. Cream cheese
1 lb. Powdered sugar
1 tsp. Lemon juice
1 tsp. Vanilla


Allow butter and cream cheese to reach room temperature. Beat cream cheese and butter together in a bowl. Slowly add in all powdered sugar. Once all the sugar is in the bowl, mix for AT LEAST an additional 12 minutes. When almost done, add in the lemon juice and vanilla.

Spread on cinnamon rolls when slightly cooled!

Summer has been amazing so far! Full of vacations, swimming, and working/playing in our new yard! Riley is getting so big and so smart, I can hardly keep up with her! Her most favorite thing to say is, "I do it!!!" Translated this means she is full of independence and only wants to do things herself without mommy's help. This can be very exasperating at times since it usually takes her 100 times as long to do everything. We are now at least 10 minutes late to everything! I guess it is all part of growing up though, right? I am trying to be patient and encourage her to learn things on her own. The quicker we can get through this stage the better! :)

Where is SUMMER?!??! It is still as cold as spring and it is the middle of June! I just don't understand! So much for global warming right?

Although it has still been pretty cold and raining out, we have rebelled and purchased a little pool to play with outside along with our new beautiful grass. We just fill the pool up with heated water from inside and Riley and Gideon swim and splash around. We will swim no matter what!

Latest funny Riley story:

Whenever we are eating strawberries Riley knows that you don't eat the green leaves on top. We always say "that's the icky part." So yesterday I let her try celery for the first time ever. She was super excited to eat it and grabbed a piece right away and took a bite. She immediately spit is out and threw it in the garbage mumbling to herself, "icky part... icky part." Then she took another bite and proceeded again to spit it in the garbage and say, "icky part!" She did this again and again until the celery stick was almost gone and must have decided that the whole thing must just be gross because she glanced up to see if I was watching then threw the whole thing in the trash as quick as possible. Later she only wanted the celery when she saw peanut butter on it and licked all the peanut butter off and left a pile of beautiful clean green celery on the table. :) Daddy's response was "What a good girl! Who likes celery anyway?!?!"

I'm so glad it is finally getting warm outside! The flowers have started blooming and the kids and I have really enjoyed going on walks to the park for picnic lunches lately. In the evenings when Josh gets off of work we like to take walks around our new neighborhood as a family too. Riley is learning her colors and likes to tell me every color she sees as we go along. Gideon is getting so big and just found his hands this last week. It is so funny watching him try and put his binky and fist in his mouth at the same time. Riley is such a big helper now and loves to help mommy with all the chores around the house. She is an expert sweeper and loves to put the silverware away in the drawer, and put clothes from the washer into the dryer for mom. She also is such a good big sister. She always makes Gideon laugh and helps with bringing diapers when he needs a change too. Today is Gideon's 3 month old mark and we went and got all these pictures taken today. The kids just kill me with how cute they are (I'm somewhat partial) and it was fun to dress them up. LoLo (their cousin) came and did pictures with us too and afterwords we all went to eat a special lunch in the mall. What a busy day, but fun. I can't believe it is April already! Time goes by so fast I can hardly keep track. I'm so excited for summer and all the fun trips we can do once the weather gets warm. I miss camping!
